Learn how to make quick coconut rice recipe in simple and easy steps. Coconut rice is a South Indian main course recipe for lunch, dinner or evening snacks. This tasty recipe is cooked with steamed rice added with fresh grated coconut and curry leaves etc.,
Coconut Rice
INGREDIENTS:
01. Ghee - 3 Tbsp.
02. Black Gram Dal - 1 Tsp.
03. Bengal Gram Dal - 1 Tsp.
04. Mustard Seeds - 1/2 Tsp.
05. Cumin Seeds - 1/2 Tsp.
06. Ground Nuts - 3 Tbsp.
07. Cashew Nuts - 3 Tbsp.
08. Red Chilly - 1 No.
09. Curry Leaves
10. Green Chillies - 2
11. Grated Ginger - 1 Tsp.
12. Grated Coconut - 1 Cup
13. Salt to taste
14. Boiled Rice - 3 Cups
METHOD:
1. Add 3 Tbsp. ghee into a pan. Add 1 Tsp. black gram dal, 1 Tsp. bengal gram dal, Half Tsp. mustard seeds, half Tsp. cumin seeds to it and saute for a while.
2. Add 3 Tbsp. ground nuts, 3 Tbsp. cashew nuts and saute for a while. Add 1 red chilly, few curry leaves, 2 green chillies, 1 Tsp. grated ginger to it and saute for a while. Add 1 cup grated coconut and cook it for another 2 minutes. Add salt to taste. Add 3 cups boiled rice to it and mix it well.
3. Garnish with coriander leaves and serve. Your yummy coconut rice ready.
