INGREDIENTS
Olive Oil - 1/4th Cup
Sugar - 3/4th Cup
Vanilla Extract - 1 Tsp
Refined Flour (Maida) - 2 Cups
Eggs -2
Baking Powder - 3/4 Tsp
Dried Cranberries - 1/2 Cup
Pistachio Nuts - 1 Cup
Method
- Pre Heat the woven to 300 degrees F (150 Degrees C).
- In a bowl add oil, sugar. And mix it well.
- Add the vanilla extract and then beat the eggs
- Now add flour, baking powder stir it well
- Mix the cranberries and pistachio nuts by hand
- Divide dough in two parts. Form two thick layers (12x2 inches) on a cookie sheet lined with parchment paper. Dough may be sticky. So wet hands with water to handle dough easily.
- Bake for 30 Minutes in the woven until layers are light brown. Remove from woven and set it aside. Cool it for 10 minutes.
- Cut the layers into small cookie pieces
- Put them on parchment covered cookie sheet.
- Reduce oven heat to 275 degrees F (135 degrees). Bake approximately 8 to 10 minutes
- After that remove them from woven. Let them cool.
