Pudina rice is a very tasty and flavourful rice recipe for lunch or dinner. Instead of white rice with any other side dish you can have this refreshing and delicious instant rice recipe served without any accompaniment. It tastes good and perfect for lunch or dinner as well as evening snack too.

PUDINA PULAO / MINT RICE
INGREDIENTS:
Oil - 2 tbsp
Ghee / butter - 2 tbsp
Cardamom - 7
Cloves - 10
Cinnamon - 1 inch
Nutmeg - 1 inch
Star anise - 3
Bay leaves - 2
Cashew nuts - few
Onions [chopped] - 1/2 cup
Beans [chopped] - 1/2 cup
Green chilies [chopped] - 4
Green peas - 1/2 cup
Mint leaves - 1/2 cup
Garlic paste - 1 tbsp
Ginger paste - 1 tbsp
Salt - 2 tsp
Water - 2 cups
Soaked rice - 1 cup
Coriander leaves - few
METHOD:
1. Heat 2 tbsp oil and 2 tbsp ghee/butter in a saucepan.
2. Add 7 cardamom, 10 cloves, 1 inch cinnamon, 1 inch nutmeg, 3 star anise, 2 bay leaves and few cashew nuts. Saute for a while.
3. Add 1/2 cup chopped onions and saute for a minute or two.
4. Add half cup beans chopped and 4 chopped green chili peppers, half cup green peas, half cup mint leaves and cook it until 5 minutes.
5. Add 1 tbsp garlic paste, 1 tbsp ginger paste, 2 tsp salt and cook it for another 2 minutes.
6. Add 2 cups water and let it boil for 5 minutes on medium flame. Add 1 cup soaked basmati rice, few mint leaves and few coriander leaves. Let's cook it until 15 minutes or until rice gets smooth on low flame by closing the lid tightly. Your pudina rice is ready to serve.
NOTE: It serves for 4 people and you may adjust the quantity of salt and green chilies according to your taste.
