Check out this healthy and delicious beetroot soup / beetroot rasam for rice. The addition of fresh coriander leaves gives the beetroot soup a rich aroma and freshly ground pepper imparts a mild spiciness to our healthy recipe. In this video we will show you how to cook this quick recipe in simple and easy steps.
BEETROOT SOUP / BEETROOT RASAM
INGREIENTS:
Tomato [chopped] - 1 cup
Onion [chopped] - 1 small
Beetroot [grated] - 1 cup
Green chili peppers - 3
Curry leaves - few
Garlic cloves [grated] - 1 tsp
Ginger [grated] - 1 tsp
Coriander leaves - few
Turmeric - 1/2 tsp
Salt - 1 tsp
Tamarind - 1 inch
Water - 5 cups
Black pepper [crushed] - 1 tsp
Ghee/Butter - 1 tbsp
Cumin seeds - 1 tsp
Garlic cloves [crushed] - 3

METHOD:
1. Add 1 cup chopped tomato, 1 small onion chopped, 1 cup grated beetroot, 3 green chilies slit lengthwise, few curry leaves, 1 tsp grated garlic cloves, 1 tsp grated ginger, few coriander leaves, half tsp turmeric and 1 tsp salt. Saute for a while.
2. Add 1 inch tamarind to it. Cook it until 3 minutes. Add 5 cups water. Cook it for 5 minutes. Add 1 tsp crushed black pepper. Strain the soup into another bowl by using strainer and put it aside.
3. Add 1tsp ghee/butter. Add 1 tsp cumin seeds, 3 garlic cloves, few curry leaves and saute for a while. Add it to soup bowl. Delicious mouthwatering beetroot soup is ready.
