SWEET PONGAL / CHAKKARAI PONGAL
INGREDIENTS:
Water - 1 1/2 cup
Green gram dal [moong dal] - 2 tbsp
Soaked basamati rice - 1/2 cup
Ghee / butter - 4 tbsp
Oil - 2 tbsp
Sugar - 3/4 cup
Cardamoms - 4
Edible camphor - pinch
Dry coconut pieces - 2 tbsp
Cashew nuts - few
METHOD:
1. Take 1 1/2 cup water into a saucepan. Boil it for 5 minutes. Let's add 2 tbsp of green gram dal / moong dal to it. Add 1/2 cup soaked basmati rice to it. [Let's soak the basmati rice in water for about 15 minutes]. Now add 3 tbsp ghee / butter. Add 2 tbsp oil. Cook it until rice gets cooked on low flame.
2. Add 3/4 cup sugar to it. Mix it well and cook it on medium flame until sugar completely dissolves. Add 4 crushed cardamoms and a pinch of edible camphor. Put it aside in a bowl.
3. Heat 1 tbsp ghee / butter. Add 2 tbsp finely chopped dry coconut pieces, few cashew nuts and fry them until they turn golden brown. Add them to the rice pudding. Your delicious sweet pongal rice dessert is ready to serve.
