Pineapple soup also known as "Pineapple Rasam" is a crazy south Indian recipe made with grated pineapple, tomato and fresh coriander leaves. It's very quick recipe and anyone can cook it within 10 minutes. It's unique flavor and taste makes you mouthwatering.

PINEAPPLE HOT AND SOUR SOUP (PINEAPPLE RASAM)
INGREDIENTS:
Grated pineapple - 2 cups
Tomato - 1 (sliced)
Curry leaves
Coriander leaves - 1/2 cup (finely chopped)
Green chilies - 2 (slit lengthwise)
Tamarind - Small lemon size
Turmeric - 1/4 tsp
Salt - 1 tsp
Water - 3 cups
Black pepper powder - 1/2 tsp
Oil - 1 tbsp
Mustard seeds - 1/2 tsp
Oil - 1 tbsp
Mustard seeds - 1/2 tsp
Garlic cloves - 3 (crushed)
METHOD:
1. Add 2 cups grated pineapple into a pan. Add 1 chopped tomato, few curry leaves, half cup coriander leaves, 2 green chilies, small lemon size tamarind, 1/4 tsp turmeric powder and 1 tsp salt. Cook it for 3 minutes in low flame.
2. Add 3 cups water. And cook it for 5 minutes. Add half tsp black pepper powder. Filter the soup into a bowl with the help of strainer.
3. Heat 1 tbsp oil in a pan. Add 1/2 tsp mustard seeds and saute for a while. Add 1/2 tsp cumin seeds. Add 3 crushed garlic cloves. Add few fresh curry leaves. Add 1 tbsp grated pineapple and saute for a while. Add it to the soup. That's it your pineapple soup is ready.
