This video shows you, how to make instant green papaya pickle for rice at home. This unique recipe is made with grated unripe papaya marinated in flavorful Indian spices and chili powder. This recipe is often used as side dish for rice in parties and get together.

GREEN PAPAYA PICKLE / INSTANT URAGAYA FOR RICE
INGREDIENTS:
Green papaya [grated] - 1 cup
Turmeric powder - 1/4 tsp
Fenugreek powder - 1 tsp
Mustard powder - 2 tsp
Salt - 1 1/2 tsp
Red chili powder - 2 tbsp
Oil - 4 tbsp
Lemon juice - 1 1/2 tbsp
METHOD:
1. Take 1 cup grated unripe papaya into a bowl. Let's add 1/4 tsp turmeric powder, 1 tsp fenugreek powder, 2 tsp mustard powder, 1 1/2 tsp salt, 2 tbsp red chili powder, 4 tbsp oil, 1 1/2 tbsp lemon juice to it. Mix them well. Let's marinate it for one day. Your instant pickled green papaya for rice is ready to serve.
NOTE: Please add some more oil after marination. Otherwise, it will affected by fungus. If you want to store it for a long time, avoid lemon juice and tempering it with some more extra oil, mustard seeds, black gram, Bengal gram, red chilies and few fresh curry leaves.
TEMPERING:
1. Heat 3 tbsp oil in a sauce pan. Let's add 1/2 tsp mustard seeds and let them splutter. Now add 1/2 tsp black gram, 1 tsp Bengal gram and saute for a while. Then add few crushed red chilies and few fresh curry leaves. Switch off the flame and add this to marinated pickle. That's it.
If you do tempering, it will stored for a long time in outside as well. If you do not do tempering it will stored for only one to two days or you may store it in refrigerator to store it for longer period of time.
