You have to prepare cashew nuts, tomato puree, poppy seeds paste and cashew nut paste before you start cooking this recipe hence it is a restaurant style dish.
Preparing Cashew Nuts:
Soak 3/4th cup cashew nuts in a bowl full of water for about 20 minutes.
Making tomato puree:
First add 4 to 5 big tomatoes in a blender. Blend the tomatoes to thick smooth paste by adding 2 to 3 tbsp of water if needed.
Making poppy seeds paste:
Blend half cup poppy seeds in a blender to thick smooth paste by adding 2 to 3 tbsp water as needed.
Making cashew nut paste:
Blend half cup cashew nuts in a blender to thick smooth paste by adding 2 to 3 tbsp of water as needed.
TOMATO KAJU GRAVY CURRY | TOMATO CASHEW NUT CURRY
INGREDIENTS:
Oil - 1/2 cup
Cardamom - 2
Cloves - 5
Cinnamon - 1/2 inch
Onions [chopped] - 1 cup
Green chili peppers - 4
Curry leaves - few
Turmeric powder - 1/4 tsp
Garlic paste - 1 tsp
Ginger paste - 1 tsp
Salt - 1 tbsp (or as needed)
Red chili powder - 2 tbsp
Tomato puree - 1 cup
Water - 1 cup
Poppy seeds paste - 1 tbsp
Cashew nut paste - 2 tbsp
Cashew nuts [soaked] - 1 cup
Coriander leaves - few
Garam masala powder - 1 tsp
Coriander powder - 1 tsp
Lemon juice - 1/2 tsp
METHOD:
1. Heat half cup oil in a saucepan. Add 2 cardamom, 5 cloves, half inch cinnamon and saute for a while.
2. Now add 1 cup chopped onions, 4 green chilies slit lengthwise and fry them until golden brown.
3. Now add few curry leaves, 1/4 tsp turmeric powder, 1 tsp garlic paste, 1 tsp ginger paste, 1 tbsp salt, 2 tbsp red chili powder and saute for a while.
4. Add 1 cup tomato puree and cook it until 2 minutes on medium flame. Now add 1 cup water and let's cook it until 4 minutes on medium flame by closing the lid.
5. Add 1 tbsp poppy seeds paste, 2 tbsp cashew nut paste and cook it until 3 minutes on medium flame.
6. Add 1 cup soaked cashew nuts into it. Add few coriander leaves and let's cook it for 2 minutes on slow flame by closing the lid.
7. Add 1tsp garam masala powder, 1 tsp coriander seeds powder, few fresh curry leaves, few fresh coriander leaves, 1/2 tsp lemon juice and mix them well.
Your tomato kaju curry for rice, roti/naan or biryani is ready to serve.
