Mango pickle is a spicy and tangy recipe for rice that is made in almost every household especially in summer. The tangy raw green mango slices marinated in flavorful Indian spices not only gives you mouthwatering aroma, it gives you delicious taste too if you have it with ghee/butter.

MANGO PICKLE | MANGO URAGAI
INGREDIENTS:
Raw green mango [chopped] - 1
Turmeric powder - 1 tsp
Salt - 2 tbsp
Red chili powder - 3 tbsp
Fenugreek powder - 1 tsp
Mustard powder - 1 tbsp
Oil - 1 cup
Garlic cloves - few
Curry leaves - few [optional]
Cumin powder - 1 tbsp
METHOD:
1. Add 1 raw green mango [chopped] into a bowl. Now add 1 tsp turmeric powder, 2 tbsp salt, 3 tbsp red chili powder, 1 tsp fenugreek powder, 1 tbsp mustard powder, 1 cup oil, few garlic pods, few curry leaves, 1 tbsp cumin powder and mix them well. Let's marinate it for 12 hours. That's it. Your delicious and spicy Mango pickle is ready to serve with rice.
NOTE: Pour some more oil on to the pickle after marination. Otherwise, it will affected by fungus easily. Store it in a glass jar or plastic jar. Don't use metal spoons in the pickle as it may cause black rust in the pickle.
PRESERVATION:
If you preserve it in outside, you may pour oil until all pieces dunk in it. If you preserve it in refrigerator it will fresh for a long time.
