BOTTLE GOURD HALWA | SORAKAYA HALWA RECIPE
INGREDIENTS:
Water - 4 cups
Bottle gourd [grated] - 2 cups
Ghee / butter - 3 tbsp
Cashew nuts - few
Raisins - few
Almonds [chopped] - few
Pistachios [chopped] - few
Sugar - 3/4 th cup
Green food color - pinch [optional]
Cardamom [crushed] - 2
NOTE: First peel the bottle gourd and cut it into 4 pieces. Now grate upper layers of each piece that to half an inch. Leave the smooth thing which is inside.
METHOD:
1. Boil 4 cups of water in a saucepan. Add 2 cups grated bottle gourd into it. Boil it for 20 minutes on medium flame. Switch off the flame and drain the excess water.
2. Now head 3 tbsp oil in a saucepan. Let's add few cashew nuts. Fry them until golden brown. Add few raisins to it. And add few chopped almonds, few chopped pistachios. Saute them for a while. Keep them aside.
3. Let's fry cooked bottle gourd with the same ghee / butter for about 3 minutes. Now add 3/4 cup sugar. You may add 1 cup for extra sweet. Cook it until 4 minutes on medium flame.
4. Now add a pinch of green food color [optional] to it. And then add 2 crushed cardamoms, cashew nuts, raisins, almonds, pistachios to it. Let it cool and serve.
